Stuffed Chicken

When you happen to buy a huge bag of apples because they are on sale, you gotta find many ways to use them besides as a side for your sandwich or in a fruit salad because it’s too cold out to make or eat a fruit salad.

So, I did some inventing today or maybe I just adjusted a recipe I saw Paula Deen make on the Food Network using apples to stuff a pork loin…

Well, whichever. It came out pretty good.

Prepping for awesomeness

Chopped red apples and onions sauteed with thyme, oregano, and butter

It smelled amazing. It smelled so good that even Luis stopped studying to see what I was cooking.

Take off heat and add cubed bread, egg, and chicken broth

Make a pocket in the chicken and stuff with the apple breading

Pan sear the chicken or bake in the oven

I served it with mashed potatoes. Very filling and great with an apple and maple glaze.
