It’s been awhile s since I have posted pictures of meals I have made.

This is our favorite meal from this past week.

I absolutely love lentils. I could eat them everyday.

I made curried lentils with sweet potato, and goat cheese, lime, and cilantro on top from Smitten Kitchen.  You can get the recipe here.  The vegetable side is ratatouille, also from Smitten Kitchen.  You can get the recipe here.   I added the goat cheese that was supposed to be for the top of the ratatouille to the curried lentils instead.  It thought it would give the curry and lime a nice addition, and it did.  The best part is both of these recipes make a large amount, so Luis and I were able to enjoy them for most of the week.
