Happy October 1st!

Happy first day of October!  My favorite month of the year.  I love watching and feeling the city change; with more color and cooler weather.

October also means Halloween, and I have started to decorate.

We replaced our Ikea flower lamp shade with a simple black chandelier for a more “dark” look, along with awesome 3D skeleton table mats from Target. I love to walk by the table and see the skeletons move along with me.

It took me all day of looking through items in my closet to find my skeleton shower curtain. I even made a help call to my mom to ensure that I really did pack them up from our move.  The bathroom stuff reminds me of my Halloween party a few years back, which is when I bought them.  I would love to have another party, but it wouldn’t be the same.

Today we participated in the Susan G. Komen Race for a Cure in Charlotte, N.C., more on the race tomorrow.

Career Fair @ GT

Luis is attending two days worth of Career Fairs to find a co-op program, and/or internship, and/or even his next potential workplace.  He could get accepted to a company in Tennessee, or Texas, or California, or Washington State.

Interviews are within the next few weeks so, keep him in your thoughts, even though it means he would be leaving me behind in Atlanta for a whole semester…

Carrot Ginger Soup @ Home

With fall on it’s way, I have been feeling orange.  While I wait for squashes and pumpkins to come into season I will have to settle for carrots. What’s another perfect meal besides orange meals during fall? Soups! Soups are perfect for fall.

With the weather being cooler lately, almost feels like fall.

Now I feel like baking some pumpkin cupcakes!

Pomodoro Sauce @ Home

Talking with my co-workers about their homemade tomato sauce recipes made me think, “why haven’t I made it before!?”.  So, off I went to the nearest store after work and grabbed a few pounds of plum tomatoes.

After boiling the tomatoes I threw them into ice water.  It helped the skin slide right off.

I added garlic, onions, fresh basil, and oregano.

I split the sauce in half and used the first portion over spaghetti, along with homemade garlic bread.

The next day, I used the second half and added meat to it to make a meat sauce and sliced up some veggies to use for a lasagna. My first ever lasagna.

Not only did Luis think it was one of the best tomato sauces he ever had, but added to the lasagna just made it amazing.  No lie, it was the best lasagna I have ever had.  I am thinking my new Sunday ritual will be to make a pot of this simple and easy sauce, jar it up and use for week day meals.  No need to buy jarred sauce ever again.  My next food goal is to turn a batch of sauce into one of my favorites; vodka sauce. Yum!

Floating Butterflies @ Home

I learned this summer that my husband does not like floating butterflies on the wall or butterflies, period.

I know it’s not for everyone, but I have been envisioning butterflies framing the television for awhile now.  They are white against an off white wall, so they do not pop.  They are just enough to draw your eye to the wall.  What I consider a little detail even though Luis sees it as a huge detail.

I love them and his family did too! He is out numbered, so they stay =)

Dumpling Party @ Home

Putting together a dumpling party is the best way to fill up three hungry guys after they have come from the gym.

I bought assorted dumplings; shrimp, veggie, pork, and chicken, along with a side of red cabbage slaw marinated in a honey ginger dressing.  I steamed some and pan fried the rest. I think the pan fried were the best.
